Collison has office hours every Monday at the Nurse Managed Health Center on UD’s Science, Technology and Advanced Research (STAR) Campus.

“This is the first step in the development of a Behavioral Health and Nutrition Center that will eventually offer a whole range of services aimed at helping people to develop and maintain a healthy lifestyle,” says Mike Peterson, chair of the Department of Behavioral Health and Nutrition. “We’re starting with patient services and will eventually expand to include education and research components.”
“Health coaches, dietitians, and other behavioral change specialists will be providing expertise to facilitate post-rehabilitation recovery, chronic disease management, weight control, and other quality-of-life issues. There is a vital need for these services in Delaware, and we’re making them available not only to UD employees but also the larger community.”
Collison is an avid cook and baker who won first prize in the 2005 Southern Living Cook-Off for her chocolate-coffee cheesecake with mocha sauce. After she won, she developed a light version of her $100,000 creation, which received the same outstanding rating in Southern Living’s Test Kitchens.
“I really enjoy transforming recipes for people who are trying to reduce fat, cut calories, or decrease the amount of sodium in their favorite foods,” she says.
Collison holds a bachelor of science degree in food science and a master’s in human nutrition, both from the University of Delaware. She has been in private practice for the past 15 years.
“We’re continuing to expand the NMHC, and having Sharon located here adds a new dimension to the services we can offer the community,” says director Allen Prettyman.
Those who are interested in consulting with Collison should first check their health care plan’s coverage of medical nutritional therapy.
