2:44 p.m., Oct. 10, 2008----For fine dining at its best, enjoy Vita Nova, UD's Department of Hotel, Restaurant and Institutional Management's (HRIM), student run- restaurant, which offers three distinct dining experiences from casual to elegant. Fusing traditional ingredients with modern preparations, Vita Nova brings the most creative American dining experience to Newark and the area.
Luncheon, which received the Best of Delaware award in the lunch buffet category, is offered from 11:30 a.m.-12:30 p.m., Mondays through Fridays.
The five-course, fixed price, a la carte dinner is available from 5:30-7:30 p.m., Wednesdays through Fridays.
For more casual dining or a quick bite, visit the Darden Bistro, Vita Nova's wine and tapas bar. It's open from 5:30-8:30 p.m., Wednesdays through Fridays.
UD's Executive Chef Joe DiGregorio has created a diverse menu at the bistro from a quick bite to the popular Chesapeake Crab Cakes. Sous Chef Debbie Elingsworth's homemade breads and desserts add a finishing touch. Specialty wines are offered by the glass, and artisanal cheeses are available accompanied by fresh fruit.
Students enrolled in HRIM rotate through 25 different positions at Vita Nova. The student making salads one day can move to manager the next and captain after that. Behind the scenes, students are in the kitchen cooking, baking and evaluating the previous day's operation. The process ensures that each student has a controlled educational experience in both management and skill-level assignments.
Vita Nova is a premier classroom dedicated to educating tomorrow's hospitality professionals, and UD is ranked in the top 10 hospitality programs nationwide by the Journal of Hospitality and Tourism Education.
